Soluble in water (1g in about 0.45mL of water), slightly soluble in ethanol and acetic acid. It has a cool sweetness, the sweetness is about half of that of sucrose, and the calorific value is similar to that of sucrose. It is a nutritional sweetener, wetting agent, chelating agent and stabilizer, and is widely used in food production. According to different crystallization conditions, the melting point varies in the range of 88 ~102 degrees Celsius, and the relative density is about 1.49.
