Recently, the reporter learned from the Professional Committee of Nut Roasted Seeds and Nuts of China Food Industry Association that the national standard "General Rules for Nut Roasted Seeds and Nuts" (hereinafter referred to as the "Standard") has been drafted for comments and will be issued soon.

It is reported that the "Standard" was jointly formulated by the Commercial Standards Center of China Business Federation and the Professional Committee of Nut Roasted Seeds and Nuts of China Food Industry Association. It took three years to complete the first draft of the Standard in February this year.

The reporter learned that the standard definition of roasted seeds and nuts is products made from fruits and vegetables seeds, nuts and nuts. As the main raw material, with or without auxiliary materials, it is made by frying, baking (including baking after cooking), frying, boiling, boiling, high-temperature sterilization or other processing techniques. According to the different production processes, it can be divided into three categories: baking and frying, and products made by boiling or other processing technologies.

Sensually, the color should be uniform, and there should be no obvious burnt color and variegated color; The particle shape is full, and there must be no obvious concave-convex particles and flat particles; Pure fragrance, taste and smell, no peculiar smell, and crispy taste of baked and fried products with shells; No foreign impurities can be seen by naked eyes. In terms of health indicators, peroxide value, acid value, total arsenic, lead, copper, aflatoxin and total number of colonies were specified respectively.

According to the characteristics of roasted seeds and nuts, corresponding regulations have been made in packaging and transportation. During storage, it is especially required that the products should be stored in a ventilated, dry, cool and clean warehouse, and should not be mixed with toxic, odorous, corrosive and humid articles. In recent years, the whole industry has shown a sustained and high-speed development trend, with the output value, profits and taxes increasing by more than 30% annually, and the proportion of its sales revenue in the total output value of the national food industry has increased year by year.

According to statistics, in 2006, the sales revenue of the whole industry exceeded 50 billion yuan, including more than 30 backbone enterprises with sales revenue 1 billion yuan, nearly 2,000 enterprises above designated size (with annual sales exceeding 5 million yuan), sales revenue of about 20 billion yuan and tens of thousands of small enterprises. However, there is no unified national standard for such a large-scale industry, which hinders the healthy and orderly development of the industry.

The technical requirements of nut roasted seeds and nuts production are not high, the entry threshold is low, and there is no relevant national standard, which leads to poor product quality and unstable quality and safety. Quality problems such as additives and pigments are exposed from time to time. In 2007, the national quality supervision and spot check of nut roasted seeds and nuts found that the content of saccharin sodium in some products exceeded the standard, the peroxide value exceeded the standard, the acid value exceeded the standard, and some products were not marked with the specific names of food additives. These unqualified products seriously infringe on the rights and interests of consumers.

An expert who participated in the drafting of the standard pointed out that because there is no professional national standard to guide enterprises to standardize production, the relevant state departments can only apply the provisions of other products when testing roasted nuts, and it is inevitable that there will be vague definitions when applying these provisions that are not aimed at roasted nuts, which is very troublesome for the industry as a whole and law enforcement departments. The promulgation of "Standard" can standardize and guide the R&D and production of domestic baked and fried nut food manufacturers, provide inspection basis for national inspection departments, and provide protection for consumers to eat baked and fried nut food safely.
