1. Braised shrimp with red wine and onions
Method:
1) Wash the shrimp, remove the shells and strings, and control the moisture.
2) Cut the onion in half, cross-section downward, and cut into thin strips.
3) Put the butter block in the pan over medium heat. After it melts, add the shrimps to the pan. Fry both sides until they change color. Dish out and set aside. Do not fry for too long. Turn over when one side changes color. When the other side changes color, Just take it out of the pot. It is best to make it with butter, which will taste more fragrant. Fry the shrimp in advance. Firstly, it will absorb the butter and make it more fragrant. Secondly, the shrimp will be larger. Fry it in advance so that it will not be eaten later when needed. Aged by frying for a long time.
4) In the same pot, add some butter and turn on high heat. After the butter melts, add onion shreds.
5) Stir-fry until the onions become slightly wilted and the edges are a little transparent.
6) Add the previously fried shrimps, stir-fry a few times, pour a tablespoon of red wine, about 15ml, along the edge of the pot (do not pour it directly on the dish), and add salt according to your taste Season, stir-fry a few times, until all the soup is reduced and serve.
2. Braised Shrimp in Oil
Ingredients:
Shrimp, green onions, tomato sauce, sugar, cooking wine, salt, oil, minced garlic, vegetable oil, coriander
Method:
1) Remove the shrimp lines first, cut along the back of the shrimp, and pick them out.
2) Pour a little more vegetable oil into the pot, heat it to 80%, then pour the shrimp into the oil pan and fry until the shrimp changes color.
3) Take out the shrimp, then leave the base oil, add minced garlic, tomato sauce, and sugar and stir-fry until fragrant.
4) Then pour the shrimp into the pot, pour cooking wine, add oil, appropriate amount of salt, add green onions, cover the pot and simmer for 1-2 minutes.
5) Then put it on the plate and it’s ready to eat!
3. Golden Anchovy Shrimp
Ingredients:
500g shrimp, oil, salt, bread crumbs, corn starch, 1 egg, black pepper, A little white vinegar
Method:
1) Clean the shrimp and start processing, use scissors to cut off the shrimp lines.
2) Remove the shrimp heads and use a toothpick to pick out the shrimp thread at the penultimate section of the shrimp tail.
3) Remove the shrimp shells.
4) Wash again and marinate with black pepper, salt and cooking wine for 20 minutes.
5) Beat an egg.
6) Coat the marinated shrimp evenly with corn starch.
7) Put it into the egg liquid and coat it with a layer of egg liquid.
8) Roll in bread crumbs.
9) Heat oil in a pot and when it is 80% hot, throw the shrimp in.
10) Fry until golden brown and then remove from the pan.
