Prepare the butter

Beat the egg whites at low speed until the fish-eye peaks form and then add the sugar in 3 times, beating until the peaks form

Cut with a rubber knife and mix well

Add the cooled milk and butter mixture, and cut to mix well so as to avoid any defoamage
