Folk have the custom of eating jiaozi on the winter solstice. According to legend, jiaozi was created by Zhang Zhongjing in the Eastern Han Dynasty to provide ordinary and health-preserving medicine for the poor people. After eating jiaozi, his ears were hot and he was warm all over. Therefore, people have the saying that eating jiaozi on the winter solstice is the most tonic for the body, and there is also the saying that eating jiaozi for the New Year is a mild cold.
Jiaozi has experienced the continuous development from the Eastern Han Dynasty to the present, with not only richer fillings, but also significant changes in skin and surface. Until now, jiaozi has not stopped developing, and the difference in the way we eat in North and South jiaozi can be reflected. So what's the difference between South and North jiaozi?
1. Due to the huge geographical differences, the stuffing in the south with warm climate is mainly seafood such as Sam Sun and shrimp, with many flavors, but in the colder north, there are more meat stuffing in jiaozi, and pork, beef, chicken and mutton are very common stuffing for dumplings.
2. Everyone must know about chaos. In fact, jiaozi with soup is called chaos. Southerners eat a lot of jiaozi soup, while northerners don't deliberately add soup to jiaozi.
3. There are also great differences in cooking methods. jiaozi is commonly cooked in the north, but southerners like steamed dumplings and fried dumpling. Jiaozi in the north is squeezed out, while jiaozi in the south is squeezed out. jiaozi with thin skin and big stuffing should sleep in the south.
4. The dumpling skins in the north are all homemade with rolling pins at home, but southerners prefer to buy them in grain and oil stores. Moreover, the dumpling skin in the north can be sealed directly by hand, but the method of dipping in water is generally used in the south. In contrast, jiaozi in the north is more generous, while jiaozi in the south looks smaller and more exquisite.
5. There are great differences between the south and the north in dipping dumplings. Southerners mainly dip jiaozi in vinegar, but northerners prefer garlic. Maybe it has something to do with jiaozi being honest in the north and jiaozi being small in the south.
