I. Braised Oxtail
Ingredients: 500g oxtail; 200g beer
Ingredients: 15g oil, 3 slices ginger, 1 star anise, 1 sprig of allspice, 500g oxtail, 35g icing sugar, 200g beer, 10g soya sauce, 10g light soya sauce, 10g oyster sauce
How to do it:
1. Add the oil and ginger to the main pot and cook for 3 mins/120°C/speed 1 to pop the aroma.
2: Add star anise, allspice and oxtail and stir-fry at 10 min/120°C/reverse/speed 1.
3: Add rock sugar, beer, soy sauce, dark soy sauce and oyster sauce and cook at 15 min/100°C/reverse/speed 1.
4: Cook again at 15 min/Varoma/reverse/speed 1, pour into a bowl and enjoy.
Two, stewed oxtail in sauce
Materials: 1000g oxtail; 2 tablespoons soy sauce; 1/2 tablespoon black pepper sauce; 1 handful of rock sugar; 1/2 scallion; half a clove of garlic; 5-6 small peppercorns; 3-4 slices of ginger; 1/3 onion; 1.5 tablespoons of soy sauce; 1 tablespoon of dark soy sauce; 1 teaspoon of aged vinegar; 1 can of beer; daikon; 2 star anise; 1 piece of cinnamon; 2 pieces of sesame leaves; 1 small handful of peppercorns; 1 small handful of cumin; 1 piece of tangerine peel; 1 piece of grass nut; 2 pieces of licorice
How to make it:
1. Prepare the dashi first.
2. Wash and soak the oxtail to remove the blood.
3, cold water into the pot, add some cooking wine, a few slices of ginger and scallions, high heat to boil skimming off the foam, continue to cook for 5 minutes.
4, its fished out and drained with warm water rinse clean. (Do not use cold water, otherwise the meat becomes old, cooked not rotten. (You can also not rinse, does not affect)
5, pour oil and rock sugar in the pot over medium-low heat
6, into the caramel color when the heat is turned down
7, pour into the oxtail stir fry color
8, and then pour into the onion garlic cloves ginger millet pepper stir fry evenly.
9, pour soy sauce, black pepper sauce, soy sauce, soy sauce and vinegar.
10, stir fry evenly. Pour in the beer, add the spice box, green onion knots and cilantro root (if you don't have it, leave it out). Bring to a boil over high heat, then turn down the heat and simmer for 1.5 hours.
