Ingredients
600g pork with skin, 10 red onions, 3 tbsp sugar, ? cup wine, 2 cups water, a pinch of pepper, a pinch of five-spice powder, 2 cups soy sauce
How to make the gravy 1. Dice the pork and skin, and mince the red onions.
2. Stir fry the red onion in 1 tbsp lard until fragrant, then add the diced pork and stir fry until the meat turns white.
3. Mix all the seasonings together, add the pork skin and bring to a boil, reduce heat and simmer for 1 hour until the skin is crispy.
