1. Put a little more oil in the pot than usual, fry the mung bean sprouts in the pot until cooked, and add garlic, salt, vinegar, soy sauce and water to continue frying. Turn off the heat after frying.
2. Cook another pot of water, add buckwheat noodles, and cook the noodles in cold water after cooking. Be sure to cook them in cold water to avoid burning your mouth when eating. Drain the noodles with cold water and pour them into the pot where the bean sprouts are fried.
3. Pour diced mustard tuber, chopped green onion and coriander into the pot and stir, and add soy sauce or sugar according to personal taste.
4. Soybeans and peanuts are fried in advance and mixed into noodles.
