1. Baking soda is called lye powder, the scientific name is sodium bicarbonate (NaHCO?) commonly known as baking soda. White fine crystals, solubility in water is less than sodium carbonate. It is an industrial chemical with low toxicity. Solid 50 ℃ above the beginning of the gradual decomposition of sodium carbonate, carbon dioxide and water, 440 ℃ when the complete decomposition. Sodium bicarbonate is an acid salt produced by neutralizing a strong base with a weak acid, and is weakly alkaline when dissolved in water. This property allows it to be used as a bulking agent in food preparation. Sodium bicarbonate will leave a residual sodium carbonate after its action, and using too much of it will give the finished product an alkaline flavor.
2. Unlike industrial soda (sodium carbonate) and baking soda (sodium bicarbonate), sodium bicarbonate is made by absorbing carbon dioxide from a solution or crystals of soda ash. Therefore, baking soda is also called cooking soda (in powder form) in some places. Baking soda is in solid state, round, white color, soluble in water.
