Ignition → steam pressure reaches the standard: "Observe the water level in the glass tube", fill the fuel ignition door (slow combustion heating for the first time), add coal, close the fire door, turn on the blower for about 20 minutes, the standby body heats up, the built-in pressurization system starts to work, and the high-temperature and high-pressure steam is automatically ejected, and the temperature of the workbench reaches about 1 15℃. )
2. Blending of paste: whether it is refined flour paste, polished rice paste, starch mixed paste without washing, or flour starch paste washed by machine or hand, put the paste into a bucket, put a consistency meter into the pulp juice, thicken it first, then dilute it, and blend it with clear water. The recommended concentration is about 12.5, which is suitable for local conditions. (Note: the depth of the liquid surface containing the paste must be higher than the length of the consistency meter).
Third, the tray is shaped → steamed: before using, the new tray should be cleaned, dried, brushed with edible oil, and then put into a high-temperature fire source for cooking, which lays a good foundation for future use. Put the tray on the console (the operator must wear long sleeves and gloves). Fill in a proper amount of starch paste (the thickness depends on the region, taste and eating method), and rotate and swing in the same direction to make the dough paste evenly shaped; 4. Take another empty tray, gently push the tray filled with molding slurry into the air-cushion steaming cabin from the inlet hatch (note: it is appropriate to close the hatch naturally), and repeat the above procedures in turn. The speed of the first operator determines the overall efficiency.
4. Cooked food is rinsed with oil → packaged and put on the market: when high-quality cold-wrapped rice skin with bright color and rich foam is introduced from the hatch, the operator will take it on time, put it on the transfer car for cooling, pay attention to closing the hatch on time, and then take down the cooled cooked food and package it for the market.
