Calamares con patatas (potatoes with squid)
For 8 people
1 kilo of fresh potatoes, unpeeled with smooth skins, cleaned
6 tablespoons of olive oil
1 onion, finely sliced
2 cloves of garlic, chopped
1 kilo of baby squid, cleaned
6 tablespoons of white wine

Method 1 Put the potatoes in a saucepan with water and boil, then reduce the heat to low for about 20 minutes, until the potatoes are soft, then cut them into large chunks or thick slices. 2 Put 4 tablespoons of olive oil in a casserole dish and fry the potatoes over a medium low heat for 10 minutes, until they are golden brown. Add the onion and fry for 8 minutes, stirring, then add the minced garlic for 30 seconds or until softened, then store punished.
3 casserole pour 2 tablespoons of olive oil, add the squid on high heat and sauté for 2 minutes, then pour in the white wine and cook for 2 minutes, then pour in the potatoes that have been prepared, stir well and put in salt pepper.
4 Chop parsley leaves or cilantro for garnish, then serve each portion with a small piece of lemon.
