500g shrimps

10g onion, 10g salt, 5g cooking wine, 10g sugar, 10g vegetable oil 5 grams
Step 1
First look at the raw materials and use physical methods to produce red oil: After washing the shrimp, cut off the shrimp whiskers and legs; pick out the shrimp threads. Do not add tomato sauce during cooking; braise with soy sauce, but cut off half of the shrimp heads and eyes to ensure that the shrimp oil can flow out naturally during cooking
Step 2
Physical method to simmer out the red oil: put a little vegetable oil in the pot, sauté the onions and ginger, add the prawns, and immediately cover the pot with a very small lid to increase the pressure in the pot and press out the red oil
Step 3
Physically simmer the red oil: You can see from the glass lid that the shrimp begins to turn red in about 1 minute. Uncover the shrimp and turn it over. Add only salt and cooking wine, and cover. Cover and continue simmering
Step 4
For about 3-5 minutes, when the red oil has completely seeped out, you can remove the cover and place the shrimps on a plate. Do not use onions and ginger
Step 5
Leave the red oil in the pot for later use. Add sugar to the remaining soup in the pot, simmer over low heat until it becomes thick, and pour it over the prawns
