Tools/materials: beef, ginger, onion, fragrant leaves, pepper, pepper, white sugar, chicken essence, oyster sauce, braised soy sauce, cooking wine, salt, clear water, edible oil, pot, plate and basin.
1. Slice ginger and cut onion. Wash the beef, cut into pieces and put it in the pot. Add appropriate amount of water, ginger slices, onion slices and cooking wine. Boil on high fire for a few minutes, and the bleeding foam will come out.
2. Scoop the cooked beef pieces into clear water, clean the blood foam and impurities on the surface, remove and drain the water for later use.
3. Pour the oil into the pot, add the onion, fragrant leaves, ginger slices and pepper and stir fry over low heat, add the beef and stir fry evenly, and add the pepper and stir fry evenly.
4. Add oyster sauce, braised soy sauce, salt and cooking wine, stir-fry evenly, add appropriate amount of water to boil, and then turn to low heat for 40 minutes.
5. Add sugar and chicken essence, stir well, then simmer for 20 minutes, turn on the fire to collect juice, and the braised beef will be cooked.
