Basic sauce for soba noodles
Ingredients: 1 piece of kombu 5×5 cm, 2 cups of water, 20 grams of bonito flakes
Seasoning: 1 soy sauce /2 cup, 1/2 cup mirin
Method: Soak kombu and water together for about 2 hours, bring to a boil over low heat, add bonito flakes and all seasonings after boiling, and continue cooking for 5~ About 6 minutes, then filter through a fine mesh. When storing, just keep it in the refrigerator and it can be stored for about 3 to 4 days.
