Buddha jumping over the wall, also known as Mantanxiang and Fushouquan, is a famous local dish in Fuzhou, Fujian.

During the Daoguang period of the Qing Dynasty, officials from Fuzhou Bureau of Official Money hosted a banquet for Zhou Lian, Fujian Minister of Public Security. During the dinner, there was a dish called "Fushouquan", which was made of chicken, duck, sheep elbow, pig's trotters, ribs, pigeon eggs, etc., and Zhou Lian was very satisfied after eating it. After returning home, Zhou Lian immediately ordered the chef Zheng Chunfa to imitate it according to law. On the basis of the original dish, he reduced the amount of meat and added a variety of seafood to enrich the content of the dish. Later, Zheng Chun sent it to Fuzhou East Street to open a "Sanyouzhai" restaurant, and served it at a banquet of literati gathering. Literati cheered after tasting it, and some people improvised a poem day: "The altar is full of meat and incense floating around, and the Buddha hears that he abandoned Zen and jumped over the wall."
