How to make garlic and eggplant strips
1. Peel and cut the eggplant into long strips, rinse with water and drain the water
2. Season the eggplant strips with salt, Mix thirteen spices and pepper, marinate for 5 to 10 minutes to remove the water, add starch and mix well
3. Mince or mash the garlic, chop the coriander and set aside
