1. Yacon Chicken Feet Soup
Ingredients: One yacon, one carrot, half a pound of beef tendon, two pairs of chicken feet, and one and a half liters of water.
Method: Boil the beef tendon and chicken feet with water first. When the water boils, skim the meat until minced. Simmer over low heat for at least one to one and a half hours. Then add the yacon and carrots and simmer for another half an hour. .
2. Yacon meat and bone soup
Ingredients: yacon, meat and bones, ginger, figs, salt.
Method: Pour the meat and bones into water, add water, ginger and figs and simmer over high heat for half an hour. Add yacon and simmer for an hour, season with salt.
3. Yacon Chicken Soup
Ingredients: 500 grams of yacon, 1 old hen, 3 slices of ginger, appropriate amount of salt.
Method: Wash the old hen, chop it into large pieces, blanch it in boiling water, pick up and drain the water. Peel the yacon and cut into hob cubes, and slice the ginger.
