Chose old tofu to make stinky tofu. Slice the tofu first, then cut it into small pieces with a knife.
Take a few pieces of tofu milk, pour some stinky tofu milk, and mash the stinky tofu milk into a paste with a spoon.
Soak the cut tofu in the mixed stinky milk for a while, turn the tofu in half, and try to soak each piece of tofu in the stinky milk. The longer the tofu is soaked, the more smelly it will be. You can soak for a while if you don't like it. )
In the process of soaking, we first adjust the juice. First, take a clean small bowl, add Chili noodles, cumin powder, oyster sauce, soy sauce and vinegar, pour a little water to dilute and stir well. After stirring well, add a spoonful of starch to the juice and stir well for later use.
Pour oil into the pan, heat oil, and stir-fry with tofu. (Note: The water content of the soaked tofu is relatively high, so be careful of oil leakage. )
Fry tofu, turn it over and fry the other side. Fry the tofu until it is golden and crisp, and then take it out.
Pour out the excess oil in the pan, leave a little base oil, pour in the freshly prepared juice and thicken.
Pour minced garlic and chopped green onion into the pot, turn it over and take it out.
