How to stir-fry prawns in Thai yellow curry
The prawns I chose today are larger and have thick meat. Wash, open the back and remove the shrimp thread (I usually cut a knife under the tail to break off the shrimp thread at the tail end, and open the back from the middle, so it is easier to pick out the shrimp thread with a toothpick at 1/2), and dry it Step 1 of making stir-fried prawns in Thai yellow curry 1
Cut small potatoes into cubes and cook them in boiling water. The cooking time depends on your personal taste. I like it not too powdery, so I cook it for about 3-5 minutes. Minutes, remove and prepare Thai yellow curry stir-fried prawns. Step 2
I used ordinary curry, which is available in supermarkets. I used two pieces to make a curry shrimp (a box of six piece). Coconut milk can usually be found on Taobao. Don't underestimate these two, it can be said to be the key to this dish. Step 3 of making Thai yellow curry stir-fried prawns
Appropriate amount of onion, chop part of it and cut part into pieces. Set aside for Thai yellow curry. Step 4 of how to make stir-fried prawns
I didn’t take detailed pictures of the process. The preparation of this dish is very simple:
First, put an appropriate amount of cooking oil in the pot, chop the onion and add it to the pot. Stir-fry until the aroma comes out, add all the prawns, stir-fry until the color turns red.
Then put 2 pieces of curry, pour in 200 grams of coconut milk, and a little sugar (I like desserts, so I put about 10 grams of sugar)
Then stir-fry evenly over high heat, if At this time, the juice feels too thick. You can add some water, but not too much.
Turn to medium-low heat and add cooked potato cubes and onions. You can add salt or not according to personal taste. Cook for about 5 minutes to let the prawns take in the flavor. Turn off the heat when the onions are soft. Pay attention to adding water according to the consistency of the juice. If it is too thin, it means there is too much water.
Drop in a little lime juice before serving. You can also squeeze the juice from 1/4 fresh lemon. Then drop in a little red oil (if you don’t have red oil or don’t like spicy food, you can omit the red oil and use salad oil or olive oil instead. The purpose is to increase the color and smoothness of the juice. Add red oil for a better color)
