Can germinated potatoes be eaten?
You can't eat it. When potatoes germinate, they will produce a toxin called solanine. Good quality potatoes only contain solanine 10 mg per 100 g, while solanine in green, germinated and rotten potatoes can be increased by 50 times or more. Eating a very small amount of Solanum nigrum is not necessarily harmful to the human body, but if you eat 200 mg of Solanum nigrum at a time (about half of the potatoes that have turned green and sprouted), it will take 15 minutes to 3 hours to get sick. The earliest symptoms are itching in the mouth and throat, upper abdominal pain, nausea, vomiting, diarrhea and other symptoms.
