You cannot eat green potatoes if they turn green.
If the potatoes turn green severely and penetrate deep into the inside, it is best not to eat them. For partially green potatoes, we can peel off all the green parts before eating them.
Generally speaking, potatoes with very little germination can still be eaten if the buds and the parts around the bud eyes are thoroughly dug out and the green parts are removed. If the potato has a large green area and many sprouting parts, it should be thrown away.
If the potato skin turns green and sprouts, it is mainly due to the solanine produced in the green potato buds. This toxin is soluble in water and is not resistant to high temperatures. Therefore, for potatoes that have sprouted, in addition to cutting off the visible buds, you must also peel the potatoes or cut them into small pieces and soak them in cold water for more than half an hour to dissolve the remaining toxins in the water.
During cooking, boiling or frying at high temperatures can further destroy the toxins. Finally, add a little vinegar, so that the toxins are basically unable to stay and it is safe to eat.
