When choosing fresh or chilled shrimp, you should look first, second, third and fourth: smell:
Look at the appearance. The head and tail of fresh shrimp are closely connected to the body, and the body of the shrimp has a certain degree of curvature.
Check the color. The shells of fresh shrimps are shiny, river shrimps are green-green, and sea shrimps are green-white (female shrimps) or egg-yellow (male shrimps). Stale shrimps have dark skin and shells, and the shrimps are slightly red or gray-purple.
The fresh shrimp meat is firm, tender and elastic.
Smell. Fresh shrimp smells normal and has no peculiar smell.
In addition, iced shrimps are easier to preserve than fresh shrimps. Frozen shrimps should be selected with a slightly bluish-gray surface, full and elastic feel; it is best not to choose those that look large and red in color.
