It's ok to cook vegetables with water boiled in an electric kettle, but as you asked, not all dishes are ok. Personal experience is that this method is not suitable for other dishes except lettuce and oily wheat.
Practice: put the washed lettuce and oily wheat vegetables into a big soup bowl (or pot), add appropriate amount of salt, sugar and peanut oil, and then pour the water just boiled in the electric kettle directly into the vegetables. The amount of water should be soaked in vegetables. After two minutes, take out the vegetables and put them on the plate.
These two dishes are often eaten raw with salad, so don't worry about burning them. Might as well try.
