Ingredients
One fresh male fish head (about 2-3 pounds), a large piece of ginger
A few green peppers, 6-8 slices of tofu
Fresh perilla leaves

How to make fish head tofu hot pot
1 . First clean the fish head, chop it into two pieces, cut the ginger into thin slices, and cut the green pepper into diagonal rings;
2. Soak the tofu in warm salt water for 10 minutes, remove and cut into thick slices for later use;
3. Heat the lard in a pot, slide the ginger slices out of the pot, add the fish heads and fry until fragrant, add enough boiling water and bring to a boil over high heat. Cook until the soup turns white, then turn to medium-low heat and continue cooking for 20 minutes;

Tips
1. You can rub some salt on the fish head and rub it, which can easily wash away the mucus on the surface. The gills must be removed, otherwise it will be fishy.
2. Eat the fish head first, and cook the tofu slowly. The more it is cooked, the more delicious it will be. When small eyes appear on the surface of the tofu, it is ready to be cooked.
3. Add boiling water and cook the fish over high heat. The soup will turn white in more than 5 minutes. Use lard to make the soup taste more delicious.
4. The same cooking can be done with other fish, but remember to use fresh fish to ensure the deliciousness of the food. There is no need to add chicken essence or the like. The leftover soup can also be used to rinse vegetables, it’s really delicious!
