1. Wash eggplant and soak it in water. Soak the astringent water out of the eggplant, and at the same time let the eggplant absorb enough water without eating oil.
2. Mix the eggplant with the raw flour and lock the water when frying, so that the eggplant is soft outside and fragrant inside.
3. Boil the cooking oil on a big fire. Note: Try chopsticks to see if the oil temperature is high. Bubbles around chopsticks indicate that the oil is hot.
4. Stir-fry the eggplant, and turn to medium-low heat after 2 minutes, so that the eggplant strips will look good and not rot.
Fry for later use.
6. The beans fly for 2 minutes and then drain.
