According to Huaxi Daily, in the first half of 2004, the retail sales of catering industry in Chengdu reached 8.43 billion yuan, ranking fourth in the country, second only to Guangzhou, Shanghai and Beijing, and ranking first in the west.
2. Experience
We already have a theoretical and practical foundation that can make our cause achieve initial success. Our current management system is enough to support 20 chain stores.
Three. Industry and market analysis
1, Development Status of Fast Food Industry in Chengdu
The development of fast food industry in Chengdu is obviously lagging behind. In the streets of Chengdu, all kinds of hot pot supermarkets and kebabs can be seen everywhere, and the chain scale is extremely considerable. "Yulin string" includes more than 0/00 franchisees/kloc, and the scale is quite large, about 300 square meters. Others, such as cold pot fish and barbecue shops, are also quite numerous, most of which are chain-operated. In sharp contrast, there are few snack bars in Chengdu, which are all famous snacks in China. It is understood that there are 23 kinds of snacks in Chengdu that have won the title of "China Time-honored Brand", all of which are concentrated in the hands of Chengdu Catering Company. Chengdu Catering Company is a state-owned enterprise. Due to the mechanism, Chengdu has only opened more than 30 stores so far, and the area is quite large, mainly concentrated in the bustling business district.
Compared with the cities where most Chinese fast food chains gather in China, there are almost no chain stores that can be named. Fast food restaurants distributed in communities and general business districts are mostly family workshops with front shops and back factories, which have great mobility and poor hygiene, and are far from the brand and scale.
2. Shaxian snack
Shaxian County is located in the northwest of central Fujian Province with a history of 1600 years. There are more than 240 kinds of famous snacks, and more than 50 kinds have been listed for many years. Among them, flat meat, steamed dumplings, taro buns and Baoxin tofu pills were rated as "Chinese famous snacks" by the China Cuisine Association. Snacks in Shaxian are generally divided into rice, such as fried white glutinous rice, dried duck soup, frozen rice skin, sweet dumplings and so on. Flour, including wonton, mixed noodles, steamed dumplings, pepper and sesame cakes, lotus leaf steamed buns, etc. Beans, including sandwich tofu balls, jade roll tofu, pot tofu, plum blossom tofu and so on. Others include taro buns, beef sausages, Xiamao roast duck and so on. Among many snacks, there are 50 kinds of traditional brand-name snacks, among which flat meat, taro buns, steamed dumplings, tofu-wrapped balls, bean jelly, bean jelly skin, glutinous rice balls, pepper and sesame cakes and dried loach are the top ten varieties, while the first four are "Chinese famous snacks". After three or four years of development, the decentralized chain operation of Shaxian snacks has begun to take shape. Shaxian people only need to find their own shops in a city, from kitchen equipment to light boxes and chopsticks, and they can do it with a phone call. And as long as there are Shaxian snacks, there are daily raw material suppliers who need them. In other words, Shaxian snacks have formed a complete logistics system from raw material supply to semi-finished product supply, which has made great contributions to its rapid chain operation. A few days ago, there were 8,980 snack bars in Shaxian county, with 33,000 employees, and the operating income of the snack industry was more than 300 million yuan. There are more than 500 snacks in Shaxian, Hangzhou, more than 2,000 in Fuzhou and more than 700 in Guangzhou.
3. Special snacks are in Chengdu
In recent years, foreign fast food chain stores in Chengdu have developed rapidly. Shaxian Snacks, Huaxi Beef Powder, Nanjing Special Tangyuan and Northeast jiaozi King have all landed in Chengdu.
In Chengdu, the number of Shaxian snacks is not much, there are only more than 30 in the city, most of which are distributed near schools, but many people come to Chengdu to find shops to open stores. The benefits of Shaxian snacks in Chengdu are generally good. The South Branch of Sichuan University (about 40 square meters), which opened earlier, has just opened an annual profit of 400,000, and now its daily turnover can be maintained at around 2,000 yuan. It is estimated that the daily turnover of the electronic university store can reach 3000-4000 yuan; The turnover of several other stores that don't depend on schools can probably be maintained around 800 yuan.
Huaxi beef powder comes from Guizhou, mainly engaged in beef soup powder, and its scale in Chengdu has expanded rapidly with the development of joining. Storefronts are large and small, but the decoration style is almost the same. However, because the dishes are too monotonous, the number of Chengdu is not too large.
In 2004, Nanjing's characteristic soup dumplings developed greatly, and many of them appeared in Chengdu at once. Tangbao, like Shaxian snacks, is also a decentralized chain operation, and it is fragmented, and its positioning is mainly community stores. Because of the low requirements for store area and low investment, many stores can be opened in one year.
Chengdu's own snacks are also plotting to change. There are 23 kinds of snacks in Chengdu that have won the title of "China Time-honored Brand", all of which are concentrated in the hands of Chengdu Catering Company. However, due to many reasons such as the transformation of the old city, 10 "old brands" have gradually disappeared in the market. In July 2004, the overall restructuring of Chengdu Catering Company was completed, and the company was officially changed into a joint-stock cooperative enterprise with full shareholding, and the state-owned capital was completely withdrawn. Xiao Chongyang, the chairman and general manager of the company, said that in the future, the chain operation offensive will be further launched, and the famous snack signs in Chengdu will enter more markets.
