Grapefruit Peel Fudge for Coughs and Colds

Grapefruit is a treasure all over, so eat the pulp and leave the peel behind to make a healthy snack for coughs and colds.

Ingredients ?

Pomelo peel 150g

Water 1000g+1000g

Sugar 100g (more for dipping)

Lemon juice 10g

Pomelo Peel Fudge for Cough ?

Treat the pomelo peel by removing the yellowish-green skin and the soft part of the flesh, which is close to the cotton wool texture of the pulp, and take only the hard, molded part in the middle.

Put the peel and 1,000 grams of water into the main pot and cook at 100 degrees Celsius for 10 minutes in a small saucepan. Pour into a mesh pot to drain and cool slightly, then squeeze out the bitter water from the peel with the palms of your hands (by pressing your palms together, you can protect the shape of the peel).

Place the squeezed pomelo peel back into the main pot, add another 1,000 grams of water, and repeat the above operation once.

Place the squeezed grapefruit rind, sugar and lemon juice in the main pot, uncovered with a measuring cup, and reduce the water at 6 minutes/V/reverse small spoon.

Pour onto a baking sheet lined with parchment paper and bake at 50 degrees for 4 hours, until the top is dry.

Dust the top of the fudge with a few sugar granules and enjoy.

Tips

Two tips to avoid bitter flavor: 1. The yellowish green peel should be completely removed.

2, the two squeezing of water in step 2 should not be omitted.
