Types of cheese
Fresh cheese: it is made by directly solidifying milk and removing some water without mature processing. The texture is soft and moist, emitting fresh milk fragrance and slight sour taste, and the storage period is short.
White mold cheese: the epidermis is covered with white fungal fluff, which can keep the mold and bacteria on the epidermis to eat directly or be removed according to taste. Milk is rich, but it is generally not used for cooking.
Hard immature cheese: during the manufacturing process, it is strongly pressurized and some water is removed. The taste is mild and smooth, which is easy to be accepted by ordinary people. Easy to dissolve, it is often used to make dishes in large quantities.
