Steps for making Crispy Coprinus Mushrooms

Prepare eggs, Coprinus comatus, flour, bread crumbs and starch.

Wash the Coprinus comatus and tear it into strips by hand.

Soak the mushrooms in boiling water for 10 minutes until soft.

After soaking, control the water and sprinkle with black pepper, salt and chicken essence. Marinate for 10 minutes.

Sprinkle two eggs, add flour and starch, and stir evenly. Add a pinch of salt.

Squeeze out the water from the marinated mushrooms with your hands, and prepare egg batter and bread crumbs.

First coat with batter, then coat with bread crumbs. If fried golden brown.

Turn on low heat and fry until golden brown.

Put fried on oil-control paper and sprinkle with chili powder. It’s ready to eat.
Tips
1. Do not boil the mushrooms, but soak them in boiling water so that they will not become soft. Very chewy too.
2. After marinating, squeeze out the water with your hands. Don't use it if it's too dry. This locks in moisture and makes it crispy on the outside and tender on the inside.
