1. Ingredients: 200 grams of loofah, 50 grams of sixty grams, 30 grams of green onions, 20 grams of ginger, appropriate amount of salt, sugar, appropriate amount of sesame oil, and a spoonful of water starch.
2. Peel the loofah, cut off the head, tail and seeds, and cut into lengths of about 3CM with a diagonal knife; cut the green onion into sections and shred the ginger for later use.
3. Soak the turtles in water, add a little salt or oil to spit out the sediment, blanch them in boiling water until they open, remove and drain.
4. Pour a little oil into the pot and heat it up. Add the green onions and shredded ginger and sauté until fragrant. Add the loofah and a little water and stir-fry over high heat until cooked. Add the scallops, sugar and salt and stir-fry briefly. Remove from the pot. Pour in water starch before and sprinkle with sesame oil.
