Vegetarian Boiled Food: fried tofu slices, mushrooms, veggie fat intestines, veggie liver, charcoal grilled veggie intestines, bean puffs, chive blossoms, fritters, gluten, smoked tofu jerky.
Beijing's unique snack, "boiled and boiled on fire", originated from the South Cross Street in the south of the city. Legend has it that ordinary people could not afford to eat meat in the old days, so they substituted relatively cheap animal offal (pig intestines, pig livers, pig lungs, etc.).
Being heavy on the flavor, I've been a fan of the taste of lo mein since I was a kid. But knowing the source of the main ingredient, I never dared to eat more.
The way to eat it
Beijing is full of stores selling it, but the most famous one is "Small Intestine Chen", located on South Hengjie Street outside Xuanwumen, which is often visited by travelers who come to Beijing for sightseeing. The way to eat it is also very delicate.
First of all, the fire roast should be cut into wells, the tofu should be cut into triangles, the small intestines and pig lungs should be chopped into small pieces, and then poured with a bowl of old broth, sprinkled with some garlic puree, chili oil, tofu milk and chive blossoms, so that the main ingredient can fully absorb the broth, and the fire roast is penetrating without sticking, the meat is rotten without being spoiled, and the small intestines are soft without being mushy and have no bad odor.
The nutritional value of brine is very high. For example, pig lung is rich in protein and calcium and iron, phosphorus, vitamin B1, vitamin B2 and other nutrients. Pork large intestine, on the other hand, has the effect of moisturizing and relieving constipation, and pork belly is rich in calcium, potassium, sodium, magnesium, iron and other elements and vitamin A, vitamin E and other ingredients beneficial to human health.
