Rice cooker version - Recipe for stewed pork ribs with lotus root

1.

Prepare the materials. Pork ribs, lotus root, onion, ginger, garlic, pepper, aniseed and bay leaves.

2.

Cut the lotus root into thick slices and soak it in water before putting it in the pot to prevent it from oxidizing and turning black. Soak the ribs for about ten minutes until bleeding comes out. Change the water every few minutes.

3.

Boil the water and blanch the ribs. About five or six minutes. Remove and drain.

4.

After the oil is hot, stir-fry the onions, ginger, garlic, pepper and aniseed until fragrant. My fire was so strong that it was a bit mushy, and because it contained water, the splashing oil almost fried me. After frying until fragrant, put the ribs in, add cooking wine and a small amount of sugar. Fry for five to six minutes.

5.

The rice cooker appears, hehe. Put the fried pork ribs into the rice cooker and add the lotus root. Add water (I used boiled water), light soy sauce, dark soy sauce, and salt. Just make sure the water covers the ribs.

6.

Set the rice cooker to cooking mode and that’s it. Once it jumps to the keep warm button, it's almost ready. The first time I tried it was a success, it tasted great, but I didn’t expect it to be so soft.
