The steps to beat egg whites into stiff peaks are as follows:
1. Prepare the materials, egg whites and white sugar. There shouldn't be a little bit of yolk in the egg white. If you don't know how to separate the eggs with your bare hands, you can use an egg separator.
2. First, turn the mixer on low speed to break up the egg whites.
3. When it becomes fish-eye-shaped like the picture below, add 1/3 of the fine sugar.
4. Continue to beat until the egg whites begin to thicken and form a thicker foam, then add 1/3 of the sugar and beat.
5. When the egg whites are thicker and lines appear on the surface, add the last 1/3 of the sugar. When the egg beater is lifted, the egg whites will pull out a big curved hook and will not fall off, which means they are in a hard foaming state.
