How to make and wrap Fujian rice dumplings

There are various kinds of rice dumplings in Fujian. Here is how to make roasted pork rice dumplings:

Ingredients: 80 rice dumpling leaves, 20 grams of oil, 4 spoons of dark soy sauce, 2 spoons of white wine, 4 pounds of glutinous rice, 10 grams of salt, 3 pounds of pork belly, 12 tablespoons of light soy sauce, 1 pound of shrimp, 5 taels of scallops, 1 pound of mushrooms, 40 quail eggs, 1 scallion, and chicken essence.

Method:

1. Stir-fry Fujian rice dumplings with oil, add salt, light soy sauce, dark soy sauce (retain the oil for frying).

2. Saute the onions until fragrant, take out the Fujian rice dumplings and don’t throw them away, keep the fried rice for the Fujian rice dumplings.

3. Stir-fried shrimps, scallops and Fujian rice dumplings, add shiitake mushrooms to the Fujian rice dumplings.

4. Add soaked glutinous rice, + salt, light soy sauce, dark soy sauce, and chicken essence to make Fujian rice dumplings.

5. Wrap triangular rice dumplings, pork belly, and quail eggs in two leaves. During the wrapping process, add a piece of pork belly and quail eggs to one rice dumpling. I forgot to take pictures during the process. It is more convenient to hang 10 of them. Turn the pressure cooker on high heat and cook on low heat for half an hour.

Baking method:

1. Prepare the required ingredients. The meat needs to be braised first. Add oil in the pot, add sugar and stir-fry until the color turns brown. Then add the meat pieces and stir-fry. Add Soy sauce, water, star anise, and cinnamon, cook for 20 minutes.

2. Wash and drain the soaked glutinous rice, add it to the pot and stir-fry. After the lard melts, add the onion and fry until golden brown. Pour in the glutinous rice, add the marinade and stir-fry vigorously.

3. Fold three layers of rice dumpling leaves into a funnel shape, put eggs, mushrooms, dried shrimps, lotus seeds and meat respectively, add glutinous rice, seal well, cook with broth made from large pig bones, and make rice dumplings. Put it in and cook for two hours.
