4. Put oil in a hot pot, add scallion, stir-fry until fragrant. The fried rice noodles are not fragrant, and it is also very important to stir-fry.
5. Add pork and continue to stir fry. You can change pork into beef, chicken and other meat according to your personal preference. Pay attention to the color of the meat when frying, and just fry until it changes color.
6. Add rice noodles. When frying rice noodles, it is necessary to have a full fire, keep stirring, and try to pick up the rice noodles and don't make a ball.
7. Add shredded carrots and shallots, add appropriate amount of soy sauce and salt, and continue to stir fry.
8. When frying rice noodles, it is necessary to heat the rice noodles evenly in a short time. I usually hold a spatula in my left hand and a pair of chopsticks in my right hand, while flipping, and use chopsticks to pick up the rice noodles and not stick them together.
