Required materials: 200g of tofu (half block), fish head 1, 20ml of organic aromatic wine, 40g of organic bean paste, 0/5ml of organic soy sauce 1 0g of sugar, 0/5ml of organic soy sauce/kloc-0, 3 slices of ginger, and 0/5 ml of green pepper.

Cooking process:

Step 1

Prepare all the raw materials needed to cook this dish. The main raw materials are fish head and tofu, and I won't talk about the remaining seasonings one by one. Please see the ingredients list for details, and then you can start cooking!

Second step

In order to make the fish head clean, we cut the fish head in half, cut the tofu into pieces, clean the coriander, and cut the onion, ginger, garlic and pepper into sections for later use.

Third step

This is the key to turning fish head soup white. Dip both sides of the fish head in proper amount of raw flour, put proper amount of cooking oil in the pot, heat the oil, put the fish head in the pot, fry both sides of the fish head until golden, and then take it out for later use.

Fourth step

If there is still oil in the pot after frying the fish head, continue to fry the tofu pieces in the pot until both sides are golden. If there is not much oil left after frying the fish head, pour more oil before frying. Take it out and put it on a plate for use.

Step five

Pour more oil. When the oil is hot, add onion, ginger and garlic until fragrant.

Stir-fry the freshly fried fish head and put it in the pot.

Then add sugar to the pot to make it fresh, add bean paste and organic soy sauce, and then pour in a proper amount of cooking wine to remove the fishy smell.

Pour 400 ml of warm water into the pot. The amount of water is uncertain. It depends on the size of your fish head. If the fish head can't pass, boil the water in the pot.

Add fried tofu, bring to a boil, turn to low heat, cover and stew for 10 minutes.
