Tui Yu, also known as "noodle fish" and "Tiao Jian Er", originated from the local traditional classic pasta in Jinzhong, Shanxi Province. The shape of the noodles is narrow at two ends, generous in the middle, and somewhat sleek as a whole. When it is cooked in soup, it looks like strips of small fish, and when it is made, it is called "pulling fish" with chopsticks.
