The home cooking method of fried prawns is as follows:
Tools/Materials: 1 pair of scissors, 500 grams of prawns, 2 spoons of cooking wine, 3 spoons of white sugar, a little light soy sauce, and appropriate amount of water , 1 spoon of salt, 1 green onion, 2 slices of ginger, a little sesame oil.
1. Wash and drain the prawns, and use scissors to cut off the shrimp gun and shrimp tentacles.
2. Peel off the shrimp skin after the shrimp head with your hands. For a more beautiful presentation, you can leave the shrimp tails on. It can also be removed directly.
3. Lay the shrimp flat on the chopping board, score along the back and belly of the shrimp, and use a toothpick to pick out the black lines.
4. The pot must be hot so that red shrimp oil can be made. When the oil is hot, add ginger slices and prawns. Use a spatula to gently press the shrimp heads to force out the red oil.
5. Stir-fry the shrimp until it changes color, then add cooking wine along the edge of the pot.
6. Mix salt, sugar, light soy sauce, sesame oil and water to make seasoning. Pour into the pot, turn to medium-low heat and simmer with the lid on for about 2 minutes.
7. When the soup thickens, add green onions, stir-fry evenly and serve.
