Among them, Fushan Lamian Noodles, Penglai Noodles and Silk Cake are the most famous.
1. Fushan Lamian Noodles, with a history of 2-3 years, is known as one of the four major faces of China. Fushan Lamian Noodles is divided into three types: solid noodles, hollow noodles and Longxu Noodles. It has the characteristics of strong craftsmanship, good taste and many varieties. Solid surface is divided into round, flat and triangular shapes with more than 2 specifications. Generally, thick juice with thick strips, clear juice with thin strips, fried sauce with flat strips. Hollow noodle is a kind of rush-grass noodle with a hollow center and air permeability at both ends. In Longxu Noodles, a noodle was pulled into 248 noodles as thin as hair with superb Lamian Noodles technology.
2. Penglai noodles, a traditional dish in Penglai, have a long history. Penglai noodle is made by using the same Lamian Noodles technology as Fushan Lamian Noodles, pulling out even strips, and using Cargill fish, a famous product in Yantai, as the marinade. It is different from Fushan noodle because of its few noodles embryos and more marinade, and it is unique in its freshness and flavor. This surface is characterized by strength and biting. 3. Pancake is a kind of fine flour food developed on the basis of pulled noodles, and it is a traditional pasta variety in Shandong. It is to put flour into a basin, add proper amount of water, alkali and salt to make dough with suitable hardness. Use the square method of hand-pulled noodles to make button-shaped noodles, put them on the chopping board along the thread, brush sesame oil on the noodles, and cut the noodles into small blanks every 7.5 cm. Take a piece of noodle blank, roll it up from one end and roll it into a round cake shape, press the tail end under it and gently flatten it by hand. Bake in a pan with slow fire until both sides are golden brown and mature.
When eating, lift the dough head in the center of the cake to shake off the silk, and then scatter it in the basin and sprinkle with white sugar. Therefore, the silk cake has the characteristics of golden and bright noodles, crisp and sweet.
