What’s different is that Anhui’s hairy tofu is a famous vegetarian delicacy both at home and abroad. People are accustomed to calling it Huizhou hairy tofu. As the name suggests, the main ingredient is the hairy tofu (with inches of white hair) that is a specialty of Shexian, Tunxi, and Xiuning in Huizhou (now all part of Huangshan City). After frying in oil, it is served with green onions, ginger, and sugar. It is stewed with , salt, meat broth, soy sauce, etc.

Stinky tofu can be found in both the north and the south, and the preparation methods vary from place to place
