Ingredients: iron stick yam, tomato sauce, cooking oil, cooking wine, white sugar, white vinegar, salt and water starch.

2. After the iron stick yam is steamed, there will be some mucus on the surface. We need to cut the yam into small pieces and wash it in water to wash off the mucus on the surface.
3. Heat the pot, pour in a proper amount of cooking oil, adjust the oil to low heat, then put the tomato sauce in the pot and stir fry it into red oil.
4. After the tomato sauce is cooked, change it to medium heat, then add a spoonful of cooking wine to taste, and then add a small amount of water to thoroughly fry the tomato sauce into tomato juice.
5. After frying tomato juice, add three spoonfuls of sugar, two spoonfuls of white vinegar and a little salt to taste. At this time, we should pay attention to changing it into a small fire and stir fry slowly. Don't fry the sugar too hard, it will be bitter.
6. Add a small amount of water starch after the sugar is sauté ed, so that the sauce can be thicker, and then put the cut yam into the pot and stir fry.
7. When the yam is fried, stir fry on fire. The surface of yam is particularly slippery, and the sauce is not easy to wrap. Therefore, everyone should stir-fry for a while, stir-fry the yam until it is red, then put it on a plate, and then pour the sweet and sour juice in the pot on the yam.
Tip: Don't steam yam too soft, it will break if it is too soft, and be sure to pay attention to the time of frying sugar. You'd rather saute it than fry it all the time.
