1. Ingredients: 4 eggs, 200g of sugar;
2. Separate the egg whites and egg yolks. Be careful in this step and put the egg whites on a plate. (Both glass or iron will do).
3. Don’t forget to weigh it. The ratio of sugar to egg white is 2:1, which is equal to 50 grams of eggs and 100 grams of sugar. Add the required amount of sugar into the egg whites and stir evenly.
4. This step seems complicated, but it is actually very simple. Add a little water to the pot (the water level is below the plate, about 2-3 cm) and boil the water. After boiling, reduce the heat to low and place the egg white sugar plate on top of the pot.

6. After the sugar melts, use a whisk and start beating from low to medium speed. Once you see the color, you can speed up and hit the maximum speed.
7. If you want color, you can add pigment paste and brush it directly into the piping bag. Put the mixed paste into a piping bag, prepare to extrude the pattern, and squeeze it onto the baking paper on the baking sheet. The size should be even to avoid some being uncooked and some already pasted.
8. The shape doesn’t matter, as long as you like it. Ready to put in the oven, about 100 degrees, 1 hour.
