Have you ever heard of lotus root? This lotus root is not a lotus root slice made of flour, but a food made of lotus root powder. When eating, it needs to be soaked in warm water and then served cold. It can be used as a delicious dish with wine, or used for stir-fries or hotpots, but I personally think it tastes better served cold! I don’t know if you have ever tasted noodle lotus root. I also saw a lot of food broadcasters on the Internet eating this juicy noodle lotus root. Every bite was full of oil and my mouth was drooling, so I started making it myself.
I followed the trend and bought a bag of noodles and lotus roots some time ago. I was very excited to eat a novel delicacy for the first time. It only takes 20 minutes to make Shanxi juice-sucking lotus root at home. A large plate costs less than 2 yuan, which is a great deal. The key to whether juice-absorbing lotus root is delicious lies in its sauce. Today, Xiaozi will share with you a dish of fried lotus root noodles. The taste is spicy and delicious. It tastes almost the same as the ones in snack bars. One bite is so satisfying. If you are as greedy for noodles and lotus roots as I am, just collect them and make them to make you want to eat them again.
Ingredients
100 grams of lotus root, 1 tablespoon of chili oil, 1 tablespoon of sesame paste, 3 grams of minced garlic, millet pepper, and 3 grams of coriander
Method
1. Soak the lotus root slices in warm water for about 10 minutes until soft! (Don’t use boiling water! Otherwise, it will soak and rot, which will affect the appearance!) Take out the soaked lotus root slices and squeeze out the water and set aside!
2. Pour 1 tsp of oil into the pot, add minced garlic and millet pepper and stir-fry until fragrant.
3. Pour into a small bowl of water. Do not wait for the water to boil. Add 1 spoon of salt, 1 spoon of sugar, 1 spoon of chicken essence, 1 spoon of dark soy sauce and 1 spoon of cumin powder. Stir evenly and let the water boil. Then pour in water starch and chili powder, and simmer the soup to thicken it.
4. Squeeze out the water from the soaked lotus root slices, put them into a container, and sprinkle with coriander
5. Pour the cooked dipping sauce into it, and then add 1 1 spoon of chili pepper, 1 spoon of sesame paste, mix well and you are ready to eat
The sour and spicy food is very appetizing and delicious, and it is a good drink!
This cold dish is both a vegetable and a staple food. It is chewy and juicy, perfect for summer.
Tips
1. This noodle needs lotus root. Use warm water to soak your hair. Never use boiling water to soak your hair, otherwise it will melt and affect your appearance!
2. The sauce should not be too little, otherwise the lotus root will not absorb enough soup and will burst.
3. When mixing the ingredients, turn off the heat and wait for the sauce to cool down slightly, otherwise the batter will become mushy and lose its tenacity when heated.
4. The soaked lotus root has no signs of softness on the outside, and there is no hard core in the middle when pinched. If it has a hard core when pinched, it means it needs to be soaked for a while longer.
5. Adding dark soy sauce to the pot is for coloring, so you don’t need to add too much, just half a spoonful is enough. The seasonings above are all made according to your own taste and the amount of noodles. You can adjust it flexibly when making it.
6. Generally, the time of soaking in warm water will not be too long. It can be completely soaked in twenty minutes and the taste will be just right.
