Secret Zhou Black Duck:
Prepare ingredients and seasonings:
2 pounds of duck, vegetarian dishes (optional), 10g Sichuan peppercorns, 10g Sichuan peppercorns, 30g rock sugar , 2 small pieces of cinnamon bark, 3 bay leaves, 1 spoon of salt, 25g of chili powder, 2 cans of beer, 20g of bean paste, 40g of cooking wine, 60g of light soy sauce, and 60g of dark soy sauce.
1. Rinse the duck, soak it in water for an hour, drain the blood, add cooking wine, green onions and ginger and marinate for 1 hour.
2. Put the marinated duck in cold water, bring to a boil over high heat, rinse with water and drain.
3. Add cinnamon, bay leaves, Sichuan peppercorns, peppercorns, rock sugar and 2 bowls of water into the pot. Continue to add light soy sauce, dark soy sauce, spicy rice noodles, soybean paste and salt. Add the duck stock. Pour the beer into the duck until it reaches two-thirds of the way.
