Ingredients for making oatmeal and egg pancakes: oats, flour, eggs, yeast, salt, sugar, and cooking oil. Steps 1. First, we prepare a bowl of pure oats.
Note that the oats need to be soaked in water for 10 minutes to soften them.
Then filter out the water, put the oats in a large bowl, break in two eggs, add 10 grams of sugar, and finally add 3 grams of yeast powder, stir evenly with chopsticks, and break up the eggs.
2. Then we add 200 grams of flour and stir while adding until it becomes flocculent. Note that we can add flour in small amounts and multiple times to prevent adding too much flour.
Then we add 10 grams of cooking oil and knead it into a dough until the surface is smooth and the inside is soft as shown below.
Finally, seal the mouth of the bowl with a layer of plastic wrap and set it aside to ferment for about half an hour.

First knead the dough a few times to deflate it, then we roll the dough into a round shape and flatten it, and then roll it out thinly with a rolling pin.
Pay attention to the thickness of the dough. We just need to roll it out to 0.5 mm to 0.7 mm. Don't make it too thick.
Then take out the round mold we prepared and shape the dough into small cakes, like the picture below.

4. After the cake base is made, we cover it with plastic wrap and let it rise again for 20 minutes.
During the 6 rising process, we can preheat the electric pan and brush it with a layer of cooking oil. After it has risen, we put the cake base on it, brush the surface with a layer of cooking oil, then cover it and bake it on low heat for 3 minutes.
5. When the time is up, we turn it over and bake for another 3 minutes.
After both sides are cooked, we turn it over and cook it for another 2 minutes. This will make the cake even crispier.
