Beef dishes can be found in the literature of Song Dynasty, such as preserved beef and boiled beef. Zheng Xingpo, Volume 3 of Hong Mai's Yi Jian Zhi Ding, reveals its cooking method: There is a man named Zheng Xingpo in Hezhou City who never drinks or eats meat since he was a child, but only recites the Diamond Sutra. One spring in Shaoxing, she went to Guangxiao Temple to listen to the elders, passed by the butcher's door and saw Jufu cutting beef. She joked with her colleagues, "Use this to cut raw meat, and pour it with salt and vinegar to see if it is sweet."
Frog meat is one of the most popular game in Song Dynasty. Frog, commonly known as frog, frog, stone bump, etc. Zhu Yao's Zhou Pingke Tan has been published for two years. Southerners in Fujian, Zhejiang, Hunan, Sichuan, Guangdong and other places like to eat frog meat, which is ridiculed by people in the Central Plains. In the south of China, Hangzhou is the most famous place to eat frogs. According to Cheng Peng's "Mo Ke Dao Xi" (Volume 6), when Shen Li was an official in Hangzhou, frogs could eat pests in crops, so it was forbidden to kill them, but they never came back to life. After Shen Li left Hangzhou, the locals still ate frogs as before, and the birth of frogs became more and more prosperous. Some people even think that it is born for people to eat. In the Southern Song Dynasty, Song Gaozong strictly prohibited it, but everyone liked to eat chicken, and the wind could not stop. Some unscrupulous businessmen even peel off the wax gourd, put frog meat in it, and then send it to the home of people who eat frogs, sometimes called "sending wax gourd". Due to the large market demand, some suburban residents make a lot of money by catching frogs. Chengdu people are also like this, which is rare. Every summer, mountain people hold torches at night and go into deep streams or caves to catch giant frogs, which are called "phoenix clams". Baking with various seasonings and wine is called "baking toad". Friends and relatives feed each other in many ways (Zhang Shinan's Biography of Youguan, Volume 2).
Crabs were regarded as "delicious food" in Song Dynasty. For example, the mother of a doctor in Huzhou likes eating crabs very much. Every year when crabs are in full bloom, she will buy dozens from the market and put them in a big jar to show her children and grandchildren around. When she wants to eat, she will pick crabs from a big jar and steam them in a pot. Song Xiaozong likes to eat lake crab, too. He gets sick because he eats too much. Crab dishes are second only to fish dishes, mainly including vinegar red crab, white crab spicy soup, fried crab, boiled crab, washed crab, wine crab, squid stick, squid spicy soup, river crab, fragrant crab, waxy crab and squid. The cooking methods of crabs are more and more diverse and exquisite, such as steaming, frying, soaking, rotten and so on.
