1. Prepare materials.
Wenchang chicken, cooking wine, salt, soy sauce, oyster sauce, sugar, lemon juice, chives, ginger, coriander.
2. Rinse the chicken with water and dry it.
Spread cooking wine and salt evenly inside and outside (give the chicken a full-body massage) and marinate for 15-20 minutes.
3. Just put the chicken into the rice cooker and press the steam rice button to start steaming the chicken.
4. After the program is finished, open the lid and turn the chicken over, taking care not to scatter it. Then cover the pot and press the steam rice button again. Once it is finished, it will be steamed.
Move the whole chicken to a plate.
5. While steaming the chicken, you can prepare the dipping sauce at the same time. Mix salt, oyster sauce, soy sauce, lemon juice, sugar, sesame oil, and chili oil. You can dilute it with 2-3 tablespoons of cold boiled water, and then add chives, ginger, and coriander.
Cut them into small pieces and add them to the sauce and mix well.
6. Dip the sauce and it’s ready to eat.
