Easy fudgy sugar cookies! Soft and chewy, just like when we were kids. Dust them with icing sugar or sprinkle with icing sugar and serve. They're ready for birthday parties, potlucks or bake sales!

I couldn’t be happier rolling this cookie dough with my hands. I immediately went back to elementary school and made cookies with my mom and my friends.

I love biting into soft, chewy cookies and having those vanilla flavors at my fingertips. Nostalgic satisfaction gets you nowhere.

Chu Domi Gourmet: Fudge Cookie Recipe

Lay these cookies flat , frost them after cooling, or decorate them with a sprinkle of colored sparkling sugar before baking.

Ingredients

1 cup (225g, or 2 sticks) unsalted butter at room temperature

1 cup (200g) granulated sugar

< p>1/4 cup (55 g) packed light brown sugar

2 teaspoons vanilla extract

1 large egg

2 1/4 cups (315 g) all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon kosher salt

Done:

1/2 cup (100g) Granulated White Sugar

Chuduomi Food: Method

1 Preheat the oven: Preheat the oven to 375°F (190°C). Line a baking sheet with a silicone baking mat or parchment paper.

2 Cream butter and sugar: Place butter, sugar, and vanilla in the bowl of a stand mixer fitted with the whisk attachment. Beat the ingredients until the butter is light, fluffy and clings to the sides of the bowl.

3 Add eggs and beat well. Scrape the sides of the bowl with a spatula.

4 Add flour, baking powder and salt. Mix on low speed until dry ingredients are mostly absorbed, then increase speed until just combined.

5 Chill the dough: Chill in the refrigerator for at least an hour or overnight.

6 Shape biscuits: Knead a piece of dough. Roll it between your palms to form a ball about 1 1/2 inches in diameter, about the size of a ping pong ball. Roll the dough in powdered sugar and place on a baking sheet. Repeat, spacing cookies about 2 inches apart.

7 Press the cookie into the disk: Use the flat bottom of a glass to press down to form a thick disk about 2 inches wide. Sprinkle each disk with some sugar

8 Bake the cookies: Bake at 375°F (190°C) for 11 to 13 minutes, or until the edges of the cookies begin to turn golden brown. Cool on baking sheets for 10 minutes before transferring cookies to wire racks to cool completely.

Store in an airtight container at room temperature for up to 3 days.
