Practice of sweet and sour pork ribs
Step 1
Ribs (preferably ribs), washed in cold water.
Second step
Add a few slices of ginger and cold water to the ribs.
Third step
When the fire boils, floating foam will appear.
Fourth step
After the water boils, continue to cook for one or two minutes, remove the ribs and turn off the heat.

Wash the ribs with hot water to remove the floating foam on the surface (don't wash them with cold water, the principle of heat expansion and cold contraction will harden the meat).

Drain the water slightly.

Wash onion, ginger and star anise, cut onion into small pieces and slice ginger.

Mixed sweet and sour juice: two spoonfuls of light soy sauce, two spoonfuls of light soy sauce, three spoonfuls of sugar, four spoonfuls of vinegar (balsamic vinegar, not mature vinegar will be too sour) and five spoonfuls of cooking wine, put them in a bowl.

Put oil in the hot pot to cool, and put onions, ginger and star anise on medium and small fires, and the smell is bursting.

Add the ribs and stir-fry for a minute or two, and the fragrance will come out.

Pour in the sweet and sour sauce and stir fry a few times.

Pour boiling water until the tendons are uncovered (don't use cold water, lest the tendons shrink and harden due to thermal expansion and cold contraction).

After boiling the soup, turn to low heat, cover the pot and stew for about half an hour. Open the lid and taste whether the ribs are stewed or not. If it is not rotten, increase the stewing time appropriately.
Step 14
Stew until it is rotten, and turn to high fire to collect juice. In the process of collecting juice, pay attention to turning it with a spatula frequently (especially at the end of collecting juice) to avoid burning the bottom of the pot.

The soup received is almost the same, so you can decide to have more soup and less soup according to your personal preference.

Serve, plate, and sprinkle with chopped green onion and cooked white sesame seeds for decoration.

1. It is best to choose ribs. 2. If personal taste is heavy, you can add some salt to the sweet and sour juice. The taste of my food is weak, and the salty taste of the old soy sauce itself is enough, so I didn't put salt. 3. It's too sour to use balsamic vinegar instead of aged vinegar. The ratio of sugar to vinegar must be kept at 3: 4. 5. When collecting the juice, turn it over frequently, don't paste the bottom of the pot, it will not be in place.
