Fenfen loves delicious food, and the process is getting started.
1: Material preparation: purple sweet potato, tapioca flour, sugar, ice water.
2: Wash the purple sweet potato, steam it in a pot, press it into cotton shape, add tapioca flour, ice water and sugar, and knead it into a soft solid shape.
Knead the flour
3: Knead it into a long uniform strip, cut it into small sections, and sprinkle some powder to prevent it from sticking together.
In order to make it look better visually, I rubbed the purple and white together so that irregular lines would appear.

4: Boil the water in a pot. When it boils, put the taro balls in and cook. Pay attention to the time. The taro balls will cook quickly. Pick it up as soon as it floats, otherwise it will taste bad if it takes too long.
5: Pick up the cold water, then go through the cold water and then into the ice water, peng peng peng, so exciting, haha

Key Tips:
Have you mastered the main points:
1: Use when mixing with flour The most used is ice water, so that the taro balls will be more elastic.
2: When the taro balls are cooked and picked up, they should be poured into cold water first and then put into ice water. If you put the ice water directly into it, because the temperature is very high when you pick it up, the taro balls will only drop to Normal temperature, rather than cooling, achieves an icy effect.
When I was making taro balls, I created a homemade dessert: purple sweet potato cheese-filled icing balls. I will share the detailed process next time.
